Cabo San Lucas



In May, Ryan and I took a trip to Cabo San Lucas.  It was perfect timing: after spring breaks and right before memorial weekend. We pretty much had the resort to ourselves! It had been while since we had a vacation on the beach and it was long overdue.



While we were there we did a few activities aside from hanging by the pool and the beach. One of the days, we took a cooking class.  I found it on Tripadvisor and it was a definite win!  We spent nearly 6 hours at a lady’s house cooking up everything from salsa, soup, chili rellenos, stuffed squash flowers, tortillas, and more.  It was such a fun activity to see where a local lived and learn of her experiences in Cabo.









Another activity we did was a sail and snorkel trip.  The boat took us out to Lovers Rock where we snorkeled around the rocks. The good snorkel spots were limited, butwe made the most of it and cliff jumped too!




For the most part, we ate at the Resort.  We did venture in to town for dinner and it was so delicious we went back a second night.  The restaurant is called Los Tres Gallos.  We highly recommend this place.  Not only is the food good the atmosphere is really romantic.

Ryan completed his Masters of Business Administration!

The last two years went by fast but they certainly weren’t easy! There were many late nights spent studying and cramming for all of those assignments. Luckily those things are a thing of the past! Ryan dedicated so much time and effort to this degree I really tried to make this weekend as special as I could!
Friday was the day of Graduation. In the morning we attended the hooding ceremony for all of those students who were getting their MBA.  It was a nice, intimate ceremony with no more than 100 students.  The dean from the Daniels College of Business spoke among other professors.
After the hooding, we went to lunch at one of Ryan’s favorites: Cherry Creek Grill.  Not only is this restaurant one of Ryan’s favorites it also played a part in his school experience.  It was at this restaurant that he would meet with his mentor, former CMO of Coors, every Sunday for brunch.



When lunch was finished, it was back to the university for the Commencement Ceremony where we got to watch Ryan walk across the stage.  We finished the night off at Capitol Grill in our own private room.  It was so nice to visit with family and listen to highlights of the last two years.

Saturday morning we headed up the mountains to celebrate the rest of the weekend in Beaver Creek. We had a nice lunch at Spago. It was perfect weather to eat on the patio.  The boys headed out for a round of golf, while the girls and Mason headed for the Hotel’s pool. We relaxed and enjoyed the fresh mountain air.  


Sunday we drove back down the mountain to finish the weekend off with a small celebration at the house with family and close friends. It was a wonderful weekend! I enjoyed celebrating Ryan and all of his accomplishments. I am so proud of him! Congratulations Sweetie!!!!
